It truly is though. Basic ingredients and simple to make, but so delicious. And good for you! I love a good soup that is guilt-free… I make a big batch on Sunday, and heat it up throughout the week – an easy way to get a healthy meal without having to think too much. Good for the body and soul.
Ingredients:
1 lb. organic ground beef (I use 90% lean)
1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced carrot
1 15 oz can crushed tomatoes
1 15 oz can diced tomatoes
4 cups chopped green cabbage
2 beef bullion cubes
4 cups water
1/4 tsp garlic salt
1/4 tsp onion powder
Salt and pepper to taste
Optional: Grated parmesan for topping
Directions:
Sprinkle a little salt in the bottom of a large pot or dutch oven, and brown the ground beef, breaking it up into small pieces. When it’s cooked through, add the onion, celery and carrot (If you use lean beef, there will be just a small amount of grease to cook the vegetables in. If you use beef with a higher fat content, go ahead and drain the bulk of the grease before adding veggies). Saute for about five minutes.
Add the remainder of the ingredients, cover and let simmer on medium/low heat for 30-40 min. If desired, sprinkle with parmesan prior to serving. Enjoy!
