If you could have seen the comical scene that unfolded here this morning as I was pretending to be a blogger. I wanted to share this awesome yogurt parfait with you today in case you wanted to include it in your Easter brunch plans. The problem was there was no sun today (bad for photos) and the battery on my camera was dead as a doornail (impossible for photos). I realized that after I had made the parfaits to be photographed, of course. Terrible things followed like me kicking one of them over and then stepping in it, literally.
In the end I just snapped a pic with my phone because the picture doesn’t matter as much as you having the opportunity to put one of these amazing parfaits in your mouth. Which I did, like a savage beast, as soon as I took the photo. Not the one I kicked over. Obviously.
Okay y’all this is The Pioneer Woman’s recipe and as it always is with me, it’s fool proof. If you are looking for a healthy yogurt parfait you should probably just click on out of this one. If you want to be famous with your family, read on:
Ingredients:
One 17.5 oz container plain Greek yogurt (I use vanilla)
1/2 cup heavy cream
1 teaspoon vanilla extract
1/2 cup brown sugar
Assorted berries (I use strawberries and blueberries because basic)
Directions:
Pour the yogurt into a bowl. Add the cream and the vanilla… I am a little heavy handed with both of those. Life is short. Use a whisk and then stir until combined, it should be thick. Then, sprinkle the brown sugar evenly over the top of the yogurt mixture. Cover the bowl with plastic wrap and seal the edges, and put it in the refrigerator for at least 30 minutes.
When you’re ready to serve, place some berries in the bottom of your bowl. I use some kind of small glass for this, when serving a large group I use those clear plastic cocktail-sized cups. Without stirring the mixture, spoon the yogurt over the berries. Then end with more berries on top. You’ll see lovely swirls of brown sugar and yogurt.
This makes 4-6 servings, depending on how generous you are with your yogurt dollops.
